Pearl Millet Porridge Mix: A Comprehensive Study on Formulation, Nutritional Content and Sensory Perception

Abstract Pearl millet, an underutilized crop rich in nutrients, was used to develop an instant porridge mix.Optimal germination was achieved with 12h soaking and 24 h sprouting. Among formulation sample (30g malt) showed the best sensory acceptability. Nutritional analysis confirmed it's health benefits.
