| Abstract | Malnutrition and food insecurity remain major public health challenges in India. where protein deficiency, micronutrient deficiencies (iron, zinc, vitamin D), and poor dietary diversity are common.Mushroom consumption can play an important role in addressing nutritional gaps because mushrooms are nutrient-dense, affordable, and easy to cultivate locally. Medicinal mushrooms are nutritionally rich macrofungi containing 15–35% protein (dry weight), essential amino acids, 50–60% carbohydrates predominantly as β-glucans, and low lipid content with beneficial unsaturated fatty acids. They are excellent sources of B-complex vitamins, vitamin D, and essential minerals such as potassium, iron, and zinc. Additionally, bioactive compounds including cordycepin triterpenoids, and ergothioneine, contribute to their antioxidant and immunomodulatory properties, making them valuable as functional foods and nutraceuticals, Beyond healthcare applications, mushroom cultivation offers low-investment start-up potential, particularly for rural farmers, women self-help groups, and students entreprenuers. The integration of scientific cultivation techniques, value addition, processing technologies, and entrepreneurship training can enhance income generation and promote sustainable agriculture. This review discusses advances in medicinal mushroom cultivation, their pharmacological significance, industrial applications, start-up models, and structured training programs aimed at skill development and entrepreneurship. |
